Salad with Castelluccio lentils, various lettuces and pecorino cheese from Pienza

Ingredients for 4 persons:

 

Preparation: 

Cook into water the lentils about 30 minutes (anyway, please, check yourself the lentils' cooking before draining them). Then mixed the various lettuces with lentils and put on them the Pecorino cheese cut into small slices. Beside prepare a "citronette" sauce, mixing by hand or into a blender one egg yolk, some salt, pepper, a half lemon juice and three spoons of olive oil. Then serve the salad with this delicious sauce.
Put the curly lettuce in a salad bowl and on it you can easily dispose the apple's and pear's fine slices, the grapes, the crumbled walnut kernels and Pecorino cheese.
Finally dress all with three spoons of extra-virgin olive oil, salt, pepper and it's ready to be served. A very fresh and tasty salad!
A simple recipe but very, very tasty ....
