Small squids with beer

Ingredients for 4 persons:

  • 500 gr. of small squids
  • 200 gr. celery
  • 100 gr. mixed salad
  • 10 gr. of aromatic herbs (cipollina herb, thymus ...)
  • Extra Virgin Olive Oil
  • 5 dl. of oil for frying
  • Salt and Pepper
  • For Tempura:

  • 1 glass of Lager Beer Rython
  • 250 gr. flour
  • 1 egg yolk

Preparation:

Wash well the small squids and eliminate the central beak, the eyes and the ink sack inside.
Wash also celery, mixed salad and aromatic herbs and dry them in one centrifuge.
Cut celery in small pieces and dress it with salt, pepper and three spoons of olive oil together with mixed salad.
For tempura, mixed the egg yolk with Lager Beer Rython and flour and keep ready this batter on one side.
Dip the small squids into flour and then into batter and fry in hot oil, drip on blotting paper and salt them.
Put the mixed salad and celery on the plate in the middle and disposed over the fried small squids.
Sprinkle some drops of oil and it's ready to be served!
