Oranges with Red Tuna Mousse

Ingredients for 4 persons:

  • 2 oranges
  • 40 gr. butter
  • 150 gr. Red Tuna in olive oil "Campisi"
  • 1 anchovy fillet in oil "Campisi"
  • 30 gr. mascarpone cheese
  • 1 spoon of lemon juice
  • 30 gr. pistachio
  • cipollina herb
  • salt
  • pepper
  •  

Preparation: 

Wash carefully the oranges, wipe them and take away the upper cap.
Take away the pulp, digging them inside (the pulp can be used later for a fruit salad, for example !) and put them into refrigerating while you will prepare the stuffing.
Drip well the Red Tuna and blend it together with one anchovy , mascarpone cheese, butter, lemon juice, salt and pepper.
Then add to the mousse also the slipped pistachio, the cipollina herb and mix all together well.
Fill and stuff the oranges with this mousse and put them again into refrigerating for one hour.
After cut the oranges into slices and dispose them on a plate to be served on table.
An appetizing starter is ready!
