Striped Maccheroni with a Zolfini beans cream, Cinta Senese bacon and salted mullet role

Ingredients for 4 persons:

  • 360 gr. Maccheroni MARTELLI
  • 200 gr. Zolfini beans AGOSTINELLI
  • 2 slices of Cinta Senese bacon SAVIGNI
  • 1 onion
  • 1 celery rib
  • 1 carrot
  • Extra Virgin Olive Oil
  • rosemary
  • parsley
  • salted mullet role from Orbetello (at pleasure)
  • salt

Preparation:

Cook the Zolfini beans in salted water with chopped carrot, celery and onion slowly for about two hours; when ready, put all into a mixer (centrifuge) to get a cream. Of course, first of all, the Zolfini beans have to stay in water (soaking) for about one hour.
Then add to the cream the chopped rosemary and parsley.
Cut also the Cinta Senese bacon in small cubes and let them brown with a drop of oil on a pan, reaching a crispy aspect.
Add only the bacon cubes with the Zolfini beans cream and sauté into this sauce the Maccheroni Martelli, earlier cooked in water and dripped when slightly underdone.
Serve on plate in the middle and on each ready plate add the salted mullet role over pasta, at pleasure, cut finely.
